Cee Dub travels
the country almost non stop teaching Dutch oven cooking. He is the
star of his own long running Dutch Oven cooking show on PBS TV, the author
of numerous books and has a complete set of DVDs on Dutch Oven
cooking.
Here are details of Cee Dub's Fall 2011 Clinic. This
is his clinic, our only involvement is helping Cee Dub and Pen spread the
word.

"FALL CLINIC INFORMATION
Delmar and Sherry Hiller's Line Shack in Hunt, Texas, will be the site of
our clinic October 21-23. Some of you have attended our clinics there
before. It is a great facility! Come prepared to eat lots of scrumptious
food and have lots of fun!
We've planned three full days of hands on Dutch oven cooking, learning the
secrets of sourdough bread baking, sausage making, and more!
To go along with the fresh baked Dutch oven sourdough bread, particpants
will churn their own homemade butter.
Friday: Particpants will start with Dutch oven cookin'.
Saturday: Sourdough pancakes and breads, Dutch oven and pit cooking
meats.
Sunday: Homemade sausage and more Dutch oven cooking.
Cost: $125.00/person/day or Attend all three days for $300.00.

Dutch ovens have a long and proud history in the United
States, having been used on the Lewis and Clark expedition. None other
than Paul Revere is credited with adding the legs and turned up lip to
create the camp Dutch oven. With the recent health concerns regarding
Teflon non stick finishes Cast Iron is enjoying a hugely popular come back.
America's top cast manufacturer is working full time to keep up with demand.
The following was advice for the
2007 class. The BBQ Institute™ does not have any Dutch oven school
plans at this time (2010)
As with our BBQ Class, come hungry
and ready for a fun and food filled day of learning. Following a meet
and greet over Breakfast we will follow Cee Dubs time proven class format.
Cee Dub will break the class into small groups of three or four so that each
group can work on a dish that interests them for lunch. With a small
class size of 25 everyone can stay in touch with all that is going on.
After eating lunch there will be a thorough review of the morning cooking
session and everyone will get every recipe. The afternoon will be
spent preparing the evening meal. Everyone from complete beginner to
experienced Dutch oven cooks are guaranteed to improve their cooking skills.
Student comfort is our top priority.
The Puget sounds climate is mild in February with the ever present
Seattle Rain Festival always a possibility. We will provide an indoor
room for the lecture with indoor handicap bathroom. Outdoor cooking
area will have plenty of awnings as well as outdoor heaters and camp fires.
For those with less than perfect backs all the cooking will be on raised
Dutch Oven tables not on the ground.
