We limit class size to 20 students
No date yet, planning for a weekend before labor day.
We’re working on finding a central Texas resort location for
a two day premium class. We would eat lunch and dinner
family style with sides and adult beverages. The two day
format allows time to relax while the meats cook.
Meats would include:

USDA Prime and American Kobe Brisket. Extensive
comparative taste testing of the different grades of
Brisket, with and without injecting.

Regular and Kurobuta Pork shoulder

Spare and Baby Back Ribs, dry rubbed and competition
candy style.

Deep Smoke Prime Rib

Alaskan Salmon

Whole Chicken and Turkey

Twice Smoked and Glazed Ham

Pork Loin and Tenderloin

Desserts
Pricing will be $1000 plus resort board and lodging and cash
bar. There will also be options for participating and non
participating family members with lots of non BBQ resort
activities. Class will start at 2pm on Friday with the
first meal being Dinner. The class will end after Lunch on
Sunday. Resort will provide breakfast and optional
Friday lunch.
This format allows students to learn and experience more
without the protein and information overload of the 8 hour
format. Limit 20 students.
